Pierogi: receita tradicional polonesa é presente no cardápio pontagrossense

Se você mora na região dos Campos Gerais, provavelmente já experimentou ou pelo menos ouviu falar do pierogie dos pasteizinhos cozidos, como também chamados na localidade. No entanto, você já parou para pensar na origem dessa receita?É sobre isso que essa matéria falará.
A construção da identidade dos Campos Gerais foi formada com a imigração de vários grupos étnicos, entre eles e em grande quantidade, os poloneses. Dessa forma, a vinda desses grupos influenciaram a cidade em diversos aspectos, como na tradição, cultura, arquitetura e gastronomia, as quais se fazem presente até os dias de hoje.
Na gastronomia, são diversos pratos conhecidos e que tem suas origens nesse processo histórico, como no caso, o pierogi.
Prático típico e nacional da Polônia, o mais conhecido ao redor do mundo, tradicionalmente recheado com batatas e queijo coalhado e coberto com manteiga ou nata, tem inúmeras variações de recheios, tendo restaurantes que servem rodízios de pierogi, além de festivais em homenagem ao prato nacional.
Em Ponta Grossa, a família de Eneri Márcia CzerwonkaGriebeler (54) cultiva a tradicional receita há três gerações. Eneri, professora e aposentada, é neta de imigrantes poloneses. Seus avós maternos vieram da Polônia em 1928, desembarcaram no Rio de Janeiro e posteriormente foram para a cidade de Curitiba, onde se estabeleceram. “Vieram minha avó Antônia Czerwonka e meu avô Stanislaw Czerwonka. Já eram casados e com o primeiro filho Mieceslaw Czerwonka. Também vieram nessa viagem, os pais do meu avô, Karolina Rejman Czerwonka e Walenty Czerwonk, além do irmão do meu avô, Edward Czerwonka”, conta a professora.
Dessa forma, trouxeram na bagagem os costumes e a culinária polonesa, em especial o pierogi. Eneri conta que sua mãe, Irene Bronislava Czerwonka Griebeler (81), aprendeu ainda criança a receita. “Minha mãe lembra que ajudava sua avó a fazê-los. Ela fazia as ‘bolinhas’ e sua avó os terminava, pois sua mãe trabalhava fora”, observa Eneri.
A professora também aprendeu a fazer a receita com sua mãe e a tradição foi passada de geração para geração, mantendo a forma artesanal de fazer o prato típico. “A massa do pierogi é feita com trigo, sal, água e ovos e a forma original não pode ser passada no cilindro, como muitos fazem. Passada no cilindro, lembra a massa dos raviólis”, explica.
Além disso, a produção artesanal não utiliza nenhum equipamento. “A massa é feita a mão, os pierogis são recheados um por um. Fazemos a massa, fazemos as bolinhas da massa e as abrimos com o rolo de macarrão e as recheamos e depois as fechamos”, acrescenta Eneri.
Há várias opções de recheio, como batata e requeijão, carne, carne e repolho, batata e repolho, batata e bacon, e também doces, com frutas. Eneri e sua mãe, Irene, também fazem para vender.
