Conhecimento, trabalho duro e um sorriso no rosto são apenas algumas das marcas do Chef Juliano Komay, comandante da cozinha e sócio proprietário do Sukiyaki, o restaurante oriental mais antigo dos Campos Gerais. Quando começou a trabalhar com gastronomia, em 2007, a ideia era abrir um restaurante de comida italiana, uma das paixões de Komay, porém as coisas caminharam de uma maneira diferente. “Recebemos a proposta da dona Isabel de assumir um restaurante japonês que já tinha 18 anos de existência na cidade, e, conversando, decidimos que seria uma excelente ideia continuar o trabalho que ela iniciou”.

O que começou como um “vício” em programas de gastronomia, resultou na formação de um Chef que conta com cursos e aprendizados feitos com algumas das maiores instituições de ensino filiadas ao governo japonês, como a Nagoya Sushi School e a All Japan Sushi Association, além de uma pós-graduação voltada para a cozinha autoral.

Ao assumir o restaurante em 2008, Komay e sua família adicionaram pratos, apostaram em fornecedores do mais alto nível e mantiveram intacta a equipe de trabalho do restaurante, que se mantém praticamente a mesma até hoje. O cardápio assinado por Juliano tem um forte apelo tradicionalista japonês, com algumas tendências mais comerciais, mas que seguem todas as bases e técnicas orientais corretas de preparo e consumo.

Juliano diz que apesar da cidade ter tendências mais tradicionalistas, Ponta Grossa sempre foi receptiva para a culinária étnica, e com o boom da gastronomia oriental no Brasil, por volta dos anos 90, PG abraçou a nova moda, que é ainda mais forte por aqui, já que a região possuí uma comunidade nipônica grande e bem consolidada.

“O Sukiyaki tem um certificado emitido pelo governo japonês que garante que utilizamos muitos insumos importados do Japão, coisa que poucos restaurantes no Brasil têm”, conta com orgulho o Chef.  Juliano Komay, ao longo de 13 anos de carreira, construiu uma reputação de fazer inveja a qualquer cozinheiro do país, se tornando referência na região, tanto pela qualidade da comida, quanto pelo profissionalismo.
